Hot-smoked Salmon

The reason for 41° south's success in value adding through the processing and hot smoking is the recipe used to prepare the salmon. “It is an old European recipe with a blend of sugar, salt, herbs, spices giving it a unique flavour.” All the salmon products are made this way.

Smoked Salmon Rillettes

Our smoked salmon rillettes are made of, 50% of our hot-smoked salmon and butter, yogurt, our herb/spice mix which includes Tasmanian mountain pepper.

Tasmanian Leatherwood Ginseng Honey

41° south Ginseng and Australian Quality Honey have combined their premium products to create this pure exquisite leatherwood honey infused with Panax ginseng. The honey is sourced from the Tasmanian Tarkine Wilderness. No artificial colours, preservatives or sugars are used. Best stored at room temperature.
The active principles of Ginseng are ginsenosides, which regulate the physiological process. Ginseng works according to your body’s needs as an adaptogen.
The typical recommended daily dosage of Panax ginseng is 1 g to 2 g of raw herb, or 1000mg daily. Each jar contains saponins & ginsenoside Rb1 & Rg1.

Ginseng Spice

41˚ south Ginseng spice blend contains a mix of spices including Panax ginseng and Tasmanian Mountain Pepper which is grown at 41° south. Use this culinary seasoning for meat, fish, salads or sprinkle on sour cream.

Ginseng Praline

41° south Ginseng Chocolate Torrone.
Each praline contains 640mg of Panax ginseng. Our pralines have been created for 41° south Ginseng by Nutpatch in Kettering southern Tasmania. The dark Belgian chocolate praline contains 64% cocoa and each praline is handmade. The chocolates are filled with a soft center Torrone filling, with a dash of Panax ginseng added. This gives a bitter sweet taste sensation complementing the full Torrone flavour.

Ginseng Soap

A natural soap is made for 41° south Ginseng  by Natural Infusion Tasmania. Panax ginseng soap is a wonderful, natural soap. It contains no animal by-products and only quality plant derived oils (Tasmanian olive oil, Vegetable shortening, Coconut oil)  are used for making the soap. Making it an extremely effective option for those with sensitive skin. Please patch test for allergies with initial use. This soap contains no fragrance.

About 41° south Salmon & Ginseng Farm

The farm was carved out of of willow and gorse infested scrub in 1998. Ponds were built and wetlands were created.   A patchwork of wetland grasses, freshwater ponds, dykes, wetlands, marshes and fen set along the western creek rivulet.


The wetland was not only created to attract a wide variety of birds, it’s aim was to also be used as a natural biofilter for the salmon farm.  There is always something to see here as changing seasons bring different birds and give them a place to feed, breed, nest and rest.
