Andrew and Christian Connole, inspired by the Artisan sourdough baking of Northern Carolina, devised a plan to restore the abandoned wood-fired oven of a former family property in NSW.
Andrew and Christian, went to San Francisco where they learned from the renowned artisan baker Chad Robertson (Bay Village Bakery) the traditional process of artisan woodfired sourdough baking.
In 1997, the boys, along with their father Kerry, realised their dream and began baking their own artisan sourdough in their restored wood-fired oven in Bellata, NSW
